Auntie's Fudge.
When I asked my friends and family to give me suggestions for recipes to include, my niece Alexa unsurprisingly said FUDGE! She loves my fudge and I love that she loves it! I need to make it more often and send it to her at Stony Brook. Then when she saves the world I credit it to all the fudge she ate that kept her going! This recipe is very easy, no candy thermometer needed! There are numerous variations that are included below.

Ingredients:
1 small 7 oz jar of marshmallow creme
1 1/2 cups sugar
2/3 cup heavy cream (you can also use evaporated milk, light cream, half-and-half)
1/2 stick butter
1/4 teaspoon salt
1 teaspoon vanilla extract
1 teaspoon almond extract (or other flavoring)
12 oz dark chocolate
6 oz milk chocolate chips (or semi-sweet)
1. Line an 8" or 9" square pan with greased foil or parchment paper.
2. In a large saucepan combine marshmallow, sugar, cream, butter and salt.
3. Over medium heat, bring to a full boil.
4. Once it comes to a full boil, boil 5 minutes stirring constantly.
5. Remove from heat.
6. Add chocolate, stir until melted and mixture is smooth.
7. Stir in vanilla and other flavoring.
8. Pour mixture into prepared pan. Refridgerate until firm.
Variations:
-Stir in mini marshmallows and nuts when you add the vanilla for Rocky Road.
-Top with toffee chips as soon as you pour the mixture into the pan. Press down slightly.
-Stir in dried cranberries or cherries (use sweet liquor or flavoring in place of the almond extract) along with chopped pistachios for a holiday treat. I've even stirred in 1/2 cup white chocolate chips in place of the pistachios.
