Tristine Loves Rum Balls.


I don't make these nearly enough! You can use bourbon instead of rum if you prefer. Even use coconut rum or any other flavor you prefer!

 

 

Ingredients:

 

2 cups vanilla cookie crumbs (the better flavor the cookie has, the better flavor your ball will have!)

1 cup sweetened coconut, chopped

2 Tablespoons unsweetened cocoa powder

1 cup confectioners' sugar

2 Tablespoons light corn syrup or honey

1/3 cup rum

 

Choice of coating:

 

confectioners' sugar

jimmies

cocoa powder or even powered hot cocoa

almond meal

 

 

 

1. Line a baking sheet with parchment paper.

2. Mix all ingredients. If the mixture seems too dry add a little more corn syrup.

3. Roll in your choice of coating.

4. Store in the refridgerator. Can make up to a week in advance. The longer they sit, the stronger they are!

 

Variations:

-I have used 1/4 almond meal in place of some of the vanilla cookies.

-Use chocolate cookies in place of the vanilla and chocolate liquor or Kahlua in place of the rum.

-Use bourbon in place of the rum and roll in finely chopped pecans.
